To capitalise on the capability of cuts-based MSA grading system to develop new products that complement conventional lamb. New product development will focus on the following opportunities.
The new carcase assessment tools developed for MSA cuts-based lamb grading will be used in conjunction with information on genetic and management factors that contribute to eating quality in order to develop a new cuts-based grading system for yearling Merino and large lean lambs. The research will focus on calibration and validation of the new measurement systems for the new carcase types. The research will include measurement of physical and chemical characteristics of key indicator cuts as well as specific measurement of consumer assessment quality. Animals for this research will come from the genomics Resource Flock. Once the grading systems are established, the program will develop links with our supply chain Participants to pilot the research on a commercial scale.
A review of current primal cuts and the development of new products will be conducted in collaboration with Australian retailers and Food Processing Equipment, one of the CRC’s Participants, based in Adelaide.
